4 slices of soft white bread
3 hard-boiled eggs
2 tbsp mayonnaise (preferably Japanese mayo)
1 tsp mustard (optional)
Salt and pepper to taste
1. Peel and mash the hard-boiled eggs in a bowl.
2. Mix in mayonnaise, mustard (if using), salt, and pepper until smooth.
3. Spread the egg mixture on two slices of bread.
4. Top with the remaining slices, trim the crusts (optional), and cut into halves or quarters.
